In the heart of Palma’s bay, Hospes Maricel & Spa once again elevates its culinary offering through its iconic Restaurante Maricel with the presentation of its new Best Maricel Breakfast—a concept designed as a true morning ritual overlooking the Mediterranean Sea.

Created by chef Vicente Tarín, the experience offers a contemporary interpretation of the Mediterranean breakfast: unhurried, sensory, and deeply rooted in local produce and the culinary traditions of Mallorca.

Recently introduced to the press, Maricel’s new breakfast aims to transform the first meal of the day into a complete gastronomic experience. It is not simply about breakfast, but about slowing down time and enjoying a sequence of creations that engage with the landscape, the light, and the serenity of the surroundings.

Under the direction of Vicente Tarín, the proposal blends technique, sensitivity to product, and a modern interpretation of the Mallorcan pantry, while preserving the natural elegance and freshness that define Restaurante Maricel.

A gastronomic journey between tradition and avant-garde

The experience begins with a refined welcome: a mimosa in textures, setting the tone for a journey through Mediterranean flavors.

This is followed by light, aromatic creations such as melon with cold mint soup and toasted pine nuts, bringing freshness and brightness to the start of the menu.

Local produce takes center stage in dishes such as the smoked salmon rose with Mallorcan almond ajo blanco, grapes, and olive oil pearls, a delicate bite that balances tradition, technique, and finesse.

Mallorcan cuisine is reinterpreted through the olive oil coca with black pork sobrasada, baked apple, and figs, while more gastronomic proposals such as the country-style sausage tartare with vine tomato gel, olive oil ice cream, and fried bread bring a contemporary and playful edge to the experience.

One of the highlights of the breakfast is the low-temperature egg with hollandaise sauce, caviar, red prawn, and mini brioche for dipping, a creation that perfectly encapsulates the essence of the new concept: product excellence, precise technique, and indulgence.
