When Seville becomes a stage, the soul of the city overflows into every corner. From September 25th to October 12th, music returns to its natural home among our centuries-old walls with the Seville Opera Festival—an event that celebrates not only the art of opera, but also the deep, historic bond between the city and the lyrical tradition.
More than 150 operas have been born from or inspired by Seville. Universally known works like Carmen, Don Giovanni, and The Barber of Seville echo with myth, passion, intrigue, and desire—emotions that still walk the city streets, just as we do each day. Now, those stories come to life once again in some of the city’s most iconic venues, such as the Royal Artillery Factory, the Royal Alcázar, and the Palace Houses, in a magical encounter between the classical and the contemporary.
And just as every great story deserves to be savored, there are places that have chosen to join this celebration with experiences that awaken all the senses. Just steps from the heart of the festival, the table becomes a stage and the menu a libretto, with subtle—yet powerful—nods to the great characters of the operatic repertoire.
At Azahar Restaurant, nestled in the charming interior courtyard of the Hotel Casas del Rey de Baeza, opera is not only heard — it is interpreted. For this special occasion, the chef has created a unique menu inspired by the world of Don Giovanni — a proposal as creative as it is evocative, reimagining the symbols, flavors, and emotions of the opera.
Some dishes seem as if they were written for Don Giovanni himself — like the slow-braised Iberian pork cheek in red wine, intense, dark, and seductive, a tribute to his legendary final banquet. Or an Andalusian-style potato salad, reinvented with pringá and truffled mayo, in honor of Leporello, the loyal servant who always watches from the shadows. It all begins, as it should, with a bold and aromatic cocktail that invites you to raise your glass to the tune of “Versa il vino!”
During those two weeks, Seville is not only heard — it is smelled, tasted, and felt. And every corner — a palace, a theatre, a table — becomes part of the experience. Like fine cuisine, opera is not made of technique alone, but of emotion, rhythm, and a touch of mystery.
