Hotel Hospes Palau de la Mar and its restaurant, Ampar, invite you to discover Valencia through its cuisine: rice dishes in all aspects, shapes and flavours, vegetables and fruit are the main protagonists of Valencian cooking. Don’t miss out on the delicious creations of our chef, Carlos Julián, whose technique is based on loving the products used, taking care of every detail and being committed to getting the most flavour out of every ingredient included in his dishes.

Exquisite preparations

Some of the star dishes you can enjoy in our restaurant include octopus with citrus, red fideuà (seafood noodles), yellowfin tuna fillet with tomatoes and black olives, red mullet with garlic and black pepper, cauliflower rice and coca of pear, smoked tea and lime. Our chef, Carlos Julián, plays with colours, flavours and textures, creating unique and surprising dishes.

Palau Ampar Lounge Bar is decorated in true Hospes style: fresh and casual. Located next to the cosy interior courtyard, it is the perfect place to relax thanks to its Mediterranean atmosphere.

Our menu includes tea, coffee, soft drinks, spirits, cocktails, snacks and traditional Valencian horchata.
