Chef Javier Tortosa

Javier Tortosa, originally from Villena, has developed his international career in France and Ireland before returning to Alicante to take charge of the kitchen at Fondillón Restaurant. His philosophy is clear: locally sourced, seasonal produce and Mediterranean flavours, reinterpreted using contemporary techniques that highlight the authenticity of each ingredient.
