Pickled prey, pickles and emulsion kimchi

It is one of the dishes of our new menu that represents us the most since we use the Iberian pork, one of the icons that gives Salamanca cuisine fame.

In addition, this preparation is accompanied by pickled vegetables, a cooking process that gives the raw material a smooth texture and an acidic flavor with aromatic herbs notes very characteristic.

And as we could not miss in the kitchen of Hospes Palacio de San Esteban, we finished the dish with an Asian touch, an emulsion of kimchi that gives freshness to the dish and harmony to the whole.
