Chef Juan Agustín Rodríguez leads the kitchen at Hospes Palacio de San Esteban. He does so with respect, honesty and care. His cooking is based on ‘Charra’ gastronomy, focusing on fresh, sustainable and organic ingredients, to break with its more rigid concept and create recipes where tradition and avant-garde find a balance.
